How can I land my next UX design job with a patchwork quilt resume/portfolio?

This might sound counterintuitive, but simplify your resume, remove any and all achievements that doesn’t align with one thing: problem solving.

Problem solving is a key aspect of the UX profession. Make your resume reflect the story of how you have learned and grown by solving problems for your employers, big or small. Emphasize this and the evolution of your capabilities over time. Show that you have been, and continue to be, willing to learn.

Write about what you know, and show how you have applied that knowledge in the UX discipline. Demonstrate your passion for the discipline in every engagement you have with potential employers. If you are able to, pay for some conferences out of pocket to add to your resume and increase your “toolbox.”
